Tongue and tripe – Milasina sember
Ingredients
1 lb tongue
1 medium tripe
2 cups chopped red onions
½ cup niter kibbeh
½ tbsp ginger
½ tbsp garlic
½ tsp black pepper
1 small can tomato purée
6 cups water
Salt to taste
Method
Wash the tongue and tripe and boil in 6 cups of water.
Once tender remove from pan, keeping the water.
Cut tongue and tripe into 1 inch cubes and set to one side.
In a pan cook onions until brown.
Add the purée and butter mixing well.
Add 2 cups of the tongue and tripe water.
Stir well.
Add the tongue and tripe.
Once the sauce thickens add a further 3 cups of water.
Add all the spices and mix well.
Simmer for 15 minutes.
