Kidney, liver, intestine & tripe cooked in sauce – Yehodiqa t’ibs
Ingredients
½ lb lamb or beef kidney
½ lb lamb or beef liver
½ lb lamb or beef intestine
½ lb lamb or beef tripe
1 cup spiced butter
1 cup chopped onions
½ tsp cardamom (koremina)
½ tsp garlic
¼ tsp black pepper
Salt to taste
Method
Wash the intestine, kidney, tripe and liver thoroughly and cut into small pieces and set to one side.
In a frying pan on a medium heat, add butter and onions, cook onions until soft.
Add all the spices stirring well.
Add the intestine, kidney, tripe and liver stirring well.
Cook for 8-10 minutes.
