Ethiopian Spiced Chickpeas
1 rinsed can of chickpeas (or 1 1/2 cups freshly cooked chickpeas)
1 tablespoon olive oil
1 teaspoon cinnamon
1/2 teaspoon cumin
salt and pepper to taste
Preheat oven to 375 degrees F. Throw all ingredients onto a baking sheet and mix with your hands. Bake for 30-40 min turning once in-between. They should be crunchy outside and soft and moist on the inside.
