Dried beef stew – Yeqwant’a zilbo
1lb dried beef
2 cups chopped red onions
¼ tsp ground fenugreek
½ cup berbere
1 cup niter kibbeh
1 cup shiro water
2 ½ cups water
In a pan fry onions until brown add fenugreek stirring well.
Little by little add 1 cup water.
Add berbere and kibosh, stirring well.
In another pan on a medium heat add the beef and 2 cups of water.
Cook until beef is soft.
Once soft remove beef from water and add to the onion mix.
In a bowl dissolve shiro in water, allow to the shiro to rest on the bottom of the bowl about 5 minutes.
Add the shiro water to the beef and onion mixture.
Simmer for 30 minutes.
